For Halloween, I decided to give two classics a spooky twist: fudgy chocolate brownies and mini red velvet cupcakes topped with smooth Swiss meringue buttercream. The brownies are rich, dense, and gooey, while the cupcakes are soft and moist, balanced by the light, not overly sweet frosting.
For the decorations, I went with a red, black, and silver theme, using chocolate drizzles, spiderweb designs, edible eyeballs, silver leaf, and Halloween sprinkles. A fun way to turn two simple favorites into festive treats!
A few baking tips: For cleaner brownie slices, let them cool completely before refrigerating them for a few hours. The firmer texture makes cutting much easier!
For deeper buttercream colors, take a small portion of your Swiss meringue buttercream, add your gel food coloring (other colorings can change consistency too much), and microwave it in short bursts until just melted before mixing it back into the rest. This helps intensify the color and can give the frosting a smoother finish. If the buttercream becomes too soft, refrigerate it in 10-minute increments before whipping again. If it’s completely soupy and won’t whip, chill it longer, stirring every 15 minutes to prevent it from setting unevenly, then whip it back to its original consistency.
