A Tropical Twist on Chocolate Cake

For this cake, I wanted to try combining the richness of chocolate with the freshness of tropical fruits. I made layers of moist chocolate sponge and chocolate ganache, alternating between mango and passion fruit coulis. The slight acidity of the fruits helps balance out the sweetness of the chocolate without making the cake too heavy.

On top, I added a layer of light and crème diplomate, along with coconut truffles, fresh passion fruit, and a few gold leaf flakes. I finished by coating the sides in shaved coconut, adding a little texture and bringing all the tropical flavors together.

A few baking tips: To prevent the coulis from seeping out, pipe a ring of chocolate ganache around each cake layer and add a little gelatin to the coulis to help it hold its shape. And to avoid waste, I made the coconut truffles using leftover cake scraps mixed with ganache, rolled into balls, and coated in shredded coconut!
